Chocolate And Carob Prune Cake
This chocolate and carob prune cake is a sweet but healthy treat. The combination of carob and prunes makes a good laxative – so don’t eat too much at once! If you’re worried that your children don’t eat enough fibre, this recipe could help. It’s certainly pleasanter and healthier than the laxatives you can buy from the pharmacist. Ingredients: · 200g whole-wheat flour (or gluten free flour) · 75g/3 oz carob flour · 50g/2 oz cocoa powder · 2 teaspoons baking powder · Pinch of salt · 6-8 prunes, soaked over night or stewed for half an hour. · 2 eggs (free-range have more nutrients and better flavor than battery eggs) · 1 tablespoon sunflower oil, or other light oil (preferably cold-pressed) · Water
Method: Preheat oven to gas mark 5 (190°C, 365°F). Grease a cake tin. Puree the prunes with some of the water they were soaked/stewed in. (Check that there are no stones first.) Mix all dry ingredients. Make a well in the center. Break the eggs into the well; add the oil and some water. (Use the water from the prunes.) Mix thoroughly, adding more water if needed to make a fairly wet batter. Pour it into the cake tin and place in the oven. It should be done after about half an hour, but test with a skewer. If you want a sweeter cake, add 2 tablespoons of molasses. For a gluten free version, you can use rice flour instead of wheat flour.
