Delicious, Healthy Chocolate Mousse Recipe
This chocolate mousse recipe is dairy free and soya free, and at least as delicious as the milk- or soya-based desserts sold in little plastic cartons. It’s suitable for a raw food diet and easy to prepare as there’s no cooking involved, but you do need a food processor.
Ingredients -
Dried apricots
Dates
Sultanas
Cocoa powder
Carob flour
Method -
Soak the dried fruit overnight (or approximately eight hours). Make sure there aren’t any stones in the dates or apricots. Use a food processor to blend the fruit, with the soak water, until the mixture is smooth. This same mixture can also be used in my
oat fruit cookies
recipe.
Add equal amounts of carob flour and cocoa powder, mixing a little at a time until you get the consistency you want.
It can be served as a mousse, or cold chocolate custard, or you can add more of the cocoa and carob to make it thicker, and use it as a chocolate spread.
What about serving it with fresh fruit? Either finger size pieces to dip in, or smaller pieces mixed in - a chocolate fruit salad.
Try this chocolate yoghurt - a spoonful of the mousse mixed into a bowl of yoghurt. My youngest children love it.
