How To Make Soda Bread – It’s Quick And Simple
This is how to make soda bread very simply and quickly. There’s no kneading - no need to knead - and no waiting around for the dough to rise. You just mix all the ingredients, put it in a loaf tin and pop it in the oven. It’s all done in just over half an hour. Soda bread is a useful substitute for ordinary bread for people needing to avoid yeast - for instance, for those following the anti-candida diet. And you have complete control over the ingredients. I like to use this soda bread recipe with gluten free flours - e.g. rice flour, gram and buckwheat flours in equal amounts. It’s also very easy to make variations such as herb bread or vegetable loaf, using the same basic recipe. See my recipe book for more ideas. Ingredients: · 500g/18 oz flour · Pinch of salt · 2 tsp baking powder* · 1 tbsp oil · ~ 1 cup/225ml/8 fl oz water *Store-bought baking powder often has additives – for a simple baking powder, mix two parts cream of tartar to one part bicarbonate of soda. Method: Preheat oven to gas mark 6 (200°C, 400°F). Grease a loaf tin. Mix all dry ingredients. Make a well in the centre, add the oil and water and mix thoroughly, adding more water if necessary to make fairly wet dough. Pour into the baking tin and put in the oven. Takes approximately 30 minutes, depending on how well done you like it. Test with a skewer as you would a cake. You can eat it straight away, but it’s easier to cut when it’s cool. Soda bread can be a bit more crumbly than shop breads, especially if you use gluten free flours, but the fresh taste is delicious - well worth a few crumbs.
