Iguana Salad

My daughter's performing in The Night of The Iguana so this recipe caught my eye. Iguana salad is a variation of Guacamole and the family gave it the thumbs up.

For a serving of 3 I used:

One ripe avocado
2 tomatoes
Half a red pepper
Half an onion grated
Juice of half a lemon
small clove of garlic
Tabasco sauce
Olive oil
Low salt Herbamare

Cut the tomatoes and red peppers into small pieces and place in a bowl. Mash up the avocado with a fork adding the lemon juice and add to bowl. Stir the garlic and Tabasco - 1 or 2 drops to taste - into a little olive oil. And.. yes you've guessed it - add to bowl. Now mix and check to see if it's hot enough. Use a nice dish for serving.
