Onion And Ginger Soup For Colds And Flu
My onion and ginger soup is medicine as much as food. It’s great for when you have a cold or flu. My oldest son asks for it whenever he’s feeling really unwell (usually the result of too much partying!). Onions and garlic are known to boost the immune system; carrots and celery are rich in minerals, the heat of ginger and pepper help to counter the cooling effect of colds or flu. Use natural sea or rock salt, as these have many different essential minerals. (Refined table salt is just sodium chloride, with aluminium oxide to keep the salt free flowing.)
Ingredients: 1 onion 2 (or more) cloves garlic 1 inch piece of root ginger 2 medium carrots 2 sticks celery Sea salt or rock salt Black pepper 1 tablespoon olive oil 1 ½ pints water
Method: Gently fry the finely chopped onion in olive oil. Cut the celery and carrots into thin strips and finely slice the garlic and ginger. Add these to the pan with the onion. When the vegetables are beginning to soften add the water and bring to the boil. Simmer for 20 minutes. Add salt and pepper to taste and serve.
Vary the quantities to suit yourself. Use as much garlic, ginger and pepper as you can. I like to add some dried seaweed for extra minerals. My son likes to have just the liquid part of the soup - then I add more water to the vegetables and boil it up again for another helping.
